One day cooking courses in Cortona

"A Gift from Roberto!"

This was our second visit to Park Florito but my first opportunity to spend a day with Roberto in the kitchen. Fortunately for me, the day of my class I was the only student.
It is impossible to describe in words the magic of my experience. Roberto and I worked together to create an amazing meal of a simple pasta dish, to marscarpone pork roast, and a chocolate almond dessert. We shared stories of family, cooking and old traditions surrounded by beautiful music. However, the real gift is the peace and love you receive from Roberto while he imparts His knowledge. His excitement watching you enjoy and savor the the beauty of his food fills you with happiness. The perfect end to this incredible day was enjoying our meal under the stars with Roberto and beautiful Doumina while the twinkling fireflies completed the magic! An experience you MUST have if only once in your lifetime.

Vegetarian, Vegan, Organic Meats make it a diverse learning experience.

LEARN OF THE BEAUTY OF VEGAN, VEGETARIAN AND ORGANIC COOKING

"Rice Stuffed Radicchio
Vegetarian
Ingredients
200 G  Chicory RED (OR LARGE ENDIVES)
200 G FULL RICE
GREEK YOGURT 100 G
50 G PARMESAN
4 Tbsp EXTRA VIRGIN OLIVE OIL
1 tsp. Turmeric
SALT
FILLING: Cook the rice al dente in salted water about 20 minutes (Depending on the quality of rice), drain it and mix it to the Greek yoghurt and turmeric.
Remove the external leaves of chicory. Put 8 fresh leaves aside. Remove the heart and the rest cut into strips.
Put in two tablespoons of oil in a frying pan and saute chicory slices for 2 to 3 minutes over medium heat, stirring constantly. Add the rice and stir. Coarsely grate 25g of Parmesan and add it to the stuffing. Add salt.
Wraps: Take a spoonful of rice and arrange the midst of a chicory leaf, then fold the ends to close the roulade. Pierce the roll on a wooden skewer.
