Midnight watering and good drainage makes Vegi’s sing!

Gardeners who charges the time of watering For Their plant failures have inappropriately blamed the wrong source. It has nothing to do with the time of day you water Merely how well the soil drains around your plant roots. If your plants have good drainage then enjoy the liberty of watering either first thing in the morning or last thing at night.
The logic plays out like this - if you water your plants in the morning then they will have time to dry out before nightfall. for at evening, once the sun has September , plants are Unable to deal with water around Their roots and become susceptible to all manner of fungal diseases. Really? Let's chew through this one a little blackberries before we swallow it hollus-bollus.
Now, if this were a true statement then Should not we be covering our plants when it rains During the night? and how many of us gardeners have had plants wilt and die from fungal root diseases after enduring months of rainy days and evenings? I'll hazard a guess at none.

When you come to Parco Fiorito, our guests and students are always amazed at the amount of salt we throw into the pasta water. Compared to the scant amount Americans use, in comparison It seems over abundant. But it makes our delicious pasta!

Salt production along the coast of Sicily's West side, Reached its peak in 1860. When 31 salt pans produced over 100,000 tons per year, much of Which Was exported all over Europe. Today, demand is diminished, but there is still a niche market amongst gastronomes who swear by the salt's unique qualities. It is 100% natural and contains a higher concentration of potassium and magnesium than common salt, but less sodium chloride. The lack of chemical treatment That means the trace elements are maintained, enhancing its flavor.

Hot African winds, long sun-drenched summer days and shallow coastal waters ... the perfect recipe for salt-making, thought the Phoenicians some 2,700 years ago. Today, the very same conditions are still being put to good use in the salt pans between Trapini and Marsala in Sicily.

As to back as 6000 years before Christ, salt Has Been an important and integral part of the world's history and economics. The word "salary" was derived from the word "salt." ZERO Kilometers….made in Italy!

We gather and collect our fruit, vegetables, meat, cheese and pasta, at ZERO kilometers and have been doing it for centuries! We invented Zero kilometers (Hence the term Kilometers), but never put a name to it, it was just a natural thing for us. But in America,  a new movement is started  called Zero Kilometers (not miles, mind you), and has started a new marketing revolution!

Fields surround our cooking school. Full of red, yellow and green peppers, squash, lettuce, herbs, and in the nearby woods, truffles and mushrooms. Olive orchards, vineyards, pigs grazing in the fields, sheep, figs, honey bees, and chamomile surround us. We gather wild mint as we take an afternoon walk. Boar come down from the hills in the early morning to graze our organic vineyards, but later end up in stews and pasta, delicate and delicious.

"A Gift from Roberto!"

This was our second visit to Park Florito but my first opportunity to spend a day with Roberto in the kitchen. Fortunately for me, the day of my class I was the only student.
It is impossible to describe in words the magic of my experience. Roberto and I worked together to create an amazing meal of a simple pasta dish, to marscarpone pork roast, and a chocolate almond dessert. We shared stories of family, cooking and old traditions surrounded by beautiful music. However, the real gift is the peace and love you receive from Roberto while he imparts His knowledge. His excitement watching you enjoy and savor the the beauty of his food fills you with happiness. The perfect end to this incredible day was enjoying our meal under the stars with Roberto and beautiful Doumina while the twinkling fireflies completed the magic! An experience you MUST have if only once in your lifetime.

Cheeses throughout Italy rule the land

How important are cheeses to italy? Did you know, That a small Italian bank is giving a select group of dairy farmers the opportunity to finance Their operations with cheese.


In the Emilia Romagna region of northern Italy, a network of small dairy farmers produce the "king of cheeses", Parmigiano Reggiano. We use this cheese even in Tuscany.

Vegetarian, Vegan, Organic Meats make it a diverse learning experience.

LEARN OF THE BEAUTY OF VEGAN, VEGETARIAN AND ORGANIC COOKING

"Rice Stuffed Radicchio
Vegetarian
Ingredients
200 G  Chicory RED (OR LARGE ENDIVES)
200 G FULL RICE
GREEK YOGURT 100 G
50 G PARMESAN
4 Tbsp EXTRA VIRGIN OLIVE OIL
1 tsp. Turmeric
SALT
FILLING: Cook the rice al dente in salted water about 20 minutes (Depending on the quality of rice), drain it and mix it to the Greek yoghurt and turmeric.
Remove the external leaves of chicory. Put 8 fresh leaves aside. Remove the heart and the rest cut into strips.
Put in two tablespoons of oil in a frying pan and saute chicory slices for 2 to 3 minutes over medium heat, stirring constantly. Add the rice and stir. Coarsely grate 25g of Parmesan and add it to the stuffing. Add salt.
Wraps: Take a spoonful of rice and arrange the midst of a chicory leaf, then fold the ends to close the roulade. Pierce the roll on a wooden skewer.

One day cooking courses in Cortona!
