What’s on your mind? What’s on your plate….that’s what! Cooking Classes in Cortona. Seasonal Cooking at Parco Fiorito.

As we approach the final road down to Parco Fiorito, we can see the sheep grazing in the distance, under the olive trees from which we will bring home fresh oil the very first week in November.   The smells, the tranquility, the landscape...complete peace settles in me.  Roberto lets me know the Fig Tree ahead is ripe this week. Black, soft, and sweet, we stand and eat our breakfast of what seems like fresh Marmellata....

We are advocates of the Slow Food Movement, and our proud to tell you we have many of these products around us.  In fact just over the hill near our lake we have the Lake Trasimeno Bean. This tiny bean, about the size of a grain of rice, exists in colors ranging from ivory white to salmon pink to brown to black. Soft, buttery and flavourful, the dried beans are eaten boiled and seasoned with a little extra-virgin olive oil. The fresh beans (cornetti) are sautéed with tomatoes and garlic. Cultivated on the terraces around Lake Trasimeno, they were popular until the 1950's, and they have nearly disappeared since then.

Slow Food is an international movement founded in 1986. Promoted as an alternative to fast food it strives to preserve traditional and regional cuisine and encourages farming of plants, seeds, and livestock characteristic of the local ecosystem. It was the first established part of the broader SLOW MOVEMENT.  The movement has since expanded globally to over 100,000 members in 150 countries.

In our cooking classes and when we can, we speak about this movement and of it's importance and the way to do tasteful and healthy cooking. We want to share our history, cooking, and traditions with you, and the products from our region that are protected by the slow food movement.

We make small and precious amounts of organic wine on the property and we serve it during your cooking course.

We had a great time with Robert Russo, the owner of Relais Parco Fiorito, at his cooking class given by him personally. The course starts at 4 pm in the afternoon, and is really perfect Because it gives you the first half of the day to go sightseeing. At 4 pm, you meet him in his countryside home just 3 miles from Cortona and put on your aprons to begin your 4-course class prepared for your own enjoyment at dinner as well as all the guests at the hotel.Roberto really delights in healthy cooking and believes's's still keeping in touch with His Italian roots Which are Naples, and his life in Tuscany and Umbria. You make Pici Pasta Etruscan style (Crumbs) Which is something I have never heard of and continuing on with dessert, and an entree. There are a few surprises along the way, one of Which is great olive oil made on the property, proscuitto made from His pigs, and home made wine That is organic Sangiovese. The dining room is gorgeous and the seating is communal at a large and lovely glass and iron table in the salon of the Relais That was once a monastery. Stay here, if you can, there are only 10 rooms.

We stayed at Parco Fiorito while on our honeymoon in Italy. We both agreed that our stay there was the highlight of our trip. Our host, Roberto made ​​us feel like part of the family and made ​​it a priority to ensure we had a great time. And we did. We had a private cooking class with Roberto, during which we cooked dinner for the other guests at the hotel. We also enjoyed the private hot tub. Everything we ate there was delicious, and the wine was exceptional. We can not wait to go back! We recommend this place for anyone looking to enjoy the Tuscan country side.

We like to teach you simple recipes from our farm. Pici pasta, gnocchi, linguine, and many other recipes from our Etruscan roots. I was born in Naples and have lived in Tuscany since I was 16 years old. So it Seems only natural that I would infuse some of these Tuscan dishes with a bit of the South. The best part is that we relax, have fun, and come together as a group. Breaking bread at the table is the best way to get to know each other.

One Day Cooking Courses in Cortona

"Wonderful Retreat!"

What a wonderful place to relax, regenerate and learn to cook Italian. We had a wonderful experience getting to know and learning to cook Robertos handmade italian pasta, roast pork with cream sauce and chocolate explosion cake. When we go back we will definitely spend more time! We felt very spoiled when we left and will have very fond memories of our time at Relais Parco Fiorito.

Here at Parco Fiorito, we tend to always give more than time allows. We just can not help ourselves! Last week, in the middle of the course, someone informed us that our sheep were free, dining on herbs and grass up at the church. The church used in the same movie UNDER THE TUSCAN SUN. Everyone took off running to help get them herded into the field. What fun! Then, a spontaneous lake view drive back up the old road, and a visit to a cow farm to see the award winning Chianna added to the excitement.

Wen we returned we dined outside. Whether inside, or outside, the table is always beautiful.

Our production here is small and we just have 996 olive trees. It means we make 996 bottles of oil at the mill in November. We take our beef from the great white cow, and we produce our own wine. Just 2,000 precious bottles. Organic , too. We also have our own free range sheep, and chicken eggs.   Some say our proscuitto is the best.  It is good.  We take our pigs and feed them free-range, and organic food that flows through the kitchen. Our cooking classes in Cortona share all that we hold precious. Organic, slow, authentic food and the production thereof.

Briciole is an ancient Etruscan pasta made ​​with bread crumbs and garlic, flour, eggs, and water. Something the Etruscans, rich or poor, could manage to grow. Wheat, garlic, and eggs. We were warmly welcomed in the way you greet dear friends by Roberto Russo and his 'staff'. Relais Park Firoito was authentically Tuscan and the beauty of the resort was natural and refreshing. We Began our visit with a wonderful Prosecco and the 'feast of the senses' Began! We dined on fabulous Tuscan cuisine in a fragrant and inviting pergola (the weather was perfect). A four course meal was savored by each guest as we Exchanged our adventures of the day. The morning breakfast was lovingly prepared with natural ingredients from Roberto's own farm and the flavors were amazing. We felt like we stepped into another era where great food and stimulating conversation (a lost art) proceeded each dining experience. We ventured out each morning to explore and immersed ourselves in the areas of Tuscany , Which were great day trips, always eager to return to our retreat! Whether I was sitting by the beautiful pool watching the sun set or lounging on the expansive patio, fully embracing the gorgeous geraniums and jasmine, I felt like I was in my very own haven. No one can prepare you for the experience Which is Both delightful and memorable. Do visit and enjoy your own 'feast of the senses' ..

Room Tip: I never heard a sound from any of the other guests When I was in my house in the evening.
